Pig Kidney and Wood Ear Soup
Ingredients

30g wood ear mushrooms

300g lean pork

10 red dates (jujubes)

2 pig kidneys

3 slices of ginger

8 bowls of water
Instructions

Slice the pig kidneys open and remove the white sinewy parts. Soak them in clean water for 30 minutes. Remove from the water, cut into large pieces, rub evenly with a suitable amount of salt, and let them marinate for 10 minutes. After marinating, thoroughly rinse the salt off.

Rehydrate the wood ear mushrooms by soaking them in warm water. Remove the tough stems, wash them clean, and set aside.

Wash the red dates, flatten them slightly, and remove the pits.

Wash the lean pork, cut it into large chunks, blanch it in boiling water, and then remove it.
