Yam and Pork Rib Soup

Ingredients

  • 300g pork ribs

  • 1 yam

  • ½ cup Job’s tears (Coix seed)

  • 1 slice of Dang Gui (Angelica Sinensis)

  • 2000 ml water

  • 2 slices of ginger

  • 15 slices of Huang Qi (Astragalus root)

  • 10 red dates (jujubes)

  • A small amount of goji berries

  • Salt to taste

Instructions

  1. Blanch the pork ribs and then wash them clean. Wash the Job’s tears and the other Chinese medicinal herbs.

  2. Place the pork ribs, Job’s tears, ginger, red dates, Dang Gui, and Huang Qi into a large soup pot. Add 2000 ml of water and simmer for 3 hours.

  3. Peel the yam and cut it into chunks. Add the yam chunks to the soup during the last half hour of cooking.

  4. Add the goji berries and salt to taste just before serving.

Health Benefits

This soup is warming without being overly “dry” (in the sense of Traditional Chinese Medicine). It aids digestion, tonifies deficiency and fatigue, and helps to boost Qi. It is suitable for both the elderly and children, making it an excellent medicinal food recipe.

Yam, which strengthens the Spleen and tonifies the Lungs, has a relatively light and mild flavor. Adding Dang Gui and Huang Qi not only enhances the aroma but also helps to nourish the blood, tonify Qi, increase physical strength, and improve immunity.
