Stir-fried Spinach with Vermicelli

Ingredients

  • 250g spinach

  • 100g vermicelli (glass noodles)

  • 10g yellow wine (e.g., Shaoxing wine)

  • 5g ginger

  • 5g green onion (scallion)

  • 3g salt

  • 2g MSG (monosodium glutamate)

  • 35g sesame oil

Instructions

  1. Wash the spinach thoroughly. Wash the vermicelli. Blanch both separately in boiling water.

  2. Finely chop the green onion and mince the ginger.

  3. Heat the sesame oil in a wok. Stir-fry the chopped green onion and minced ginger until fragrant. Add the Shaoxing wine and 50 ml of stock or water.

  4. Add the blanched spinach and vermicelli to the wok. Season with salt and MSG, stir to combine, and it is ready to serve.
