Garlic Clam Chicken Soup
Ingredients

1 jin (approx. 600g) golden clams

150g peeled garlic

2 chicken carcasses

3 slices of ginger
-
1 spoonful of rice wine

A pinch of salt

2000 ml water
Instructions

Blanch the chicken carcasses (or chicken meat) to remove blood and impurities. Allow the golden clams to sit in salted water to purge any sand. Peel the garlic cloves and cut them in half (larger cloves can be cut into thirds or quarters). Slice the ginger.

Place the chicken carcasses and garlic into a large soup pot with 2000 ml of water. Simmer for 2 hours.

About 1.5 hours into the simmering time (when the soup is boiling), add the golden clams and rice wine.

Once the clams have opened, season with salt to taste and the soup is ready to be served.
