Sizzling Lotus Root Slices with Sichuan Peppercorn Oil 

Ingredients

  • 500g lotus root, sliced

  • 10g ginger

  • 3g salt

  • 20g sesame oil*

  • 10g vinegar

  • 3g MSG (monosodium glutamate)

*Note: The name of the dish implies Sichuan peppercorn oil (花椒油 – huā jiāo yóu) is used for the final sizzling step, which is a common technique. Sesame oil (胡麻油 – hú má yóu) is listed in the ingredients, which could be used for dressing or as the base for the sizzle.

Instructions

  1. Blanch the lotus root slices in boiling water.

  2. Place the blanched lotus root slices in a bowl and add salt, MSG, soy sauce*, and vinegar. Top with minced ginger.

  3. Heat the Sichuan peppercorn oil and pour it sizzling over the lotus root slices to finish.

*Note: Soy sauce (酱油 – jiàng yóu) is mentioned in the instructions but not in the ingredients list.
